About our coffee program:

We strive to represent each coffee we roast to its upmost potential - it has passed through dozens of hard-working hands on its journey to us. It is our responsibility to translate the efforts of many into the experience you have with coffee.

We roast our celebrated coffees at our roastery located in Laramie, WY. In the third quarter of 2009 we moved into a larger roasting facility which provides us with the space and utility necessary to continue our effort in presenting the best cup of coffee possible.

Our roasting facility is Certified Organic by CCOF. We offer several organic single origin and blended coffese at a variety or roast levels to suit any coffee lover. Every farmer cultivating the coffee we buy is paid to a higher standard than Fair Trade.

This exceptional offering from the regions outside the Yemen capital city of San'ani offers some of the most complex flavors we've ever experienced in an origin. Wine-like acidity hits the palate first, followed by hints of dark chocolate alongside some darker red fruit notes. A clairvoyant body then finishes sweet with honey nuances.

Our current spotlight coffee is this magnificent blend featuring organic coffees from Sumatra and El Salvador. This blend has an exceptionally big, and exceptionally clean body complimented with smooth creamy notes. The El Salvador offers this clarity and adds balance; wheras the Sumatra offers dark red and purple fruit notes with its classically big body.

We roast the Sumatra to an espresso roast and the El Salvador to a classic medium / city roast.

Our long-time favorite at the cafes, this offering from the Chiapas region of Mexico is known for both its citrus-like acidity and bittersweet chocolate body.

This coffee is exotic and frankly, extraterrestrial.  Purchased via auction lots by the most discriminating coffee experts, Mario is the original Gesha area on the farm in Jaramillo, Panama, not one of the newly planted areas. It is located between 1500-1650 meters and harvested during the month of February, 2010. Gesha (often spelled, wishfully, but inaccurately as Geisha) is a cultivar with strong Ethiopian roots.

A rare coffee, the Gesha cultivar from Panama announces itself so clearly and beautifully in the cup flavors. Extremely floral in the aromatics, with loads of tropical fruit, it is light bodied and delicate, yet extremely flavorful and long-lasting on the palate. There is no other coffee quite like it. It has a dry fragrance that lets you know right away what is coming when the water hits the cup: incredible sweet floral, citrus blossom and sweet honey perfume. In intensity, the fruited, floral aspects of the Gesha are more in league with the wet-processed Ethiopians and Kenyas than any other Central American coffee.

When tasting the Gesha coffees, the cup flavors might seem less intense than the extreme aromatics indicate.  However, as the cup cools, the flavor intensity and brightness will increase exponentially.

Cupping Notes: Mario Enero is shockingly sweet in the dry fragrance. Jasmine and honeysuckle floral accent with berry fruits come through. Honey and mild graham cracker hints are also evident. The wet aroma also has distinct jasmine, as well as cherry notes, honey, caramel and soft milk chocolate. The cup has a light-yet-juicy body. Interestingly, after these knock-out aromatics, the first sip of the hot brew can be a little bit soft. Wait for the temperature to drop a few degrees and it really "opens up." Flavors of vanilla, floral jasmine and bright raspberry with hints of bergamot orange will tickle your tongue. The after-taste is of warm melting chocolate, toasted rustic bread and hazelnut.

Our current offering from the Sidama region of Ethiopia is a naturally processed, grainpro stored, fruit-bomb. Intense blue and red fruit notes overtake the senses in this cup. Just remember its only coffee.

The Tarrazu region of Costa Rica is renowned for producing exceptional coffees, and this offering comes from one of the best Co-ops in the region. Produced by the 836 members of Coope Dota around the towns of San Marcos, San Pable, and Santa Maria de Dota, the Hermosa brand is a blend of Caturra and Catuai strictly hard bean (SHB) premium preparation done at 90% above screen 16.
